7 Layered Taco Dip

SERVES: 40 servings: 2 Tbsp. of Dip Per Serving

The must have party dip! This is a great, easy recipe people love. Our family has made it for gatherings for as long as I can remember. Refried beans are layered with guacamole, salsa plus more!
INGREDIENTS

1 (16 ounces) can refried beans
1 (12 ounces) Tub of Yucatan® Guacamole
1 (12 ounces) Tub Yucatan® Salsa
1 cup sour cream
1 (6 ounce) can sliced black olives
1 bunch green onions, chopped
2 cups shredded Mexican cheese blend

DIRECTIONS
  1. Spread refried beans on bottom of large serving bowl
  2. Top with layers Yucatan® Salsa Guacamole, Yucatan® Guacamole Salsa and sour cream.
  3. Sprinkle with black olives, green onions.
  4. Top with the Mexican cheese blend.
  5. Refrigerate until ready to serve.
  6. Serve alongside your favorite tortilla chips!

    TIP: For extra flavor, sprinkle with chopped, fresh cilantro.

Chicken Guacamole Quesadillas

SERVES: 20-24 wedges

This is a great recipe for parties! The zesty chicken and cooked peppers are a succulent delight when mixed with the Yucatan® Guacamole.
INGREDIENTS
1 pound skinless, boneless chicken breast, diced
1 (1.27 ounce) packet fajita seasoning
1 Tbsp. vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 (12 ounce) tub of Yucatan® Guacamole
1 Tbsp. bacon bits
1 (8 ounce) package shredded Monterey Jack cheese
1 (12 ounce) tub Yucatan® Salsa
DIRECTIONS
  1. Preheat the broiler. Grease a baking sheet.
  2. Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
  5. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. On the other half of the tortillas spread a layer of Yucatan® Guacamole. Fold the tortillas in half and Place onto a baking sheet.
  6. Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.
  7. Serve with Yucatan® Salsa for dipping! Yum!
